Dutch Colonial Mansard Roof

Is this fiber glass? Also, I have a gambrel roof…Should the corners of my ceiling/roof be insulated like a regular wall and not a roof? Some people have told me to punch circular soffit vents in each joist bay, but I’m worried I’m just introducing unconditioned air through my walls.
